Cook red and blackcurrants together with elderberry juice to a fruity jam. On winter days, the jam tastes particularly good.
Currant and elderberry jam
Ingredients for 4 glasses (à 370 ml)
- approx. 500g red and blackcurrants (900 g cleaned)
- 500 g jam sugar for berries or gelling sugar 2: 1
- 100 ml elderberry juice
1. Mix berries and preserving sugar in a large saucepan, cover for about 2 hours.
2. Add elderberry juice, bring to a boil while stirring. Boil with stirring according to the packing instructions (gelling sample!). Put in jars, close immediately.
