Sweet Potato Tortillas | Homemade Tortillas | A Sweet Pea Chef (April 2019).
A quick appetizer idea from the food blog "Loeffelchenvollzucker" are the potato tacos with home-made tortillas.
Ingredients for 2 persons
- 125g cornmeal
- 100g white flour
- 1 generous pinch of salt
- about 450ml of water
For the tortillas, place all ingredients in a bowl and knead by hand into a dough. If necessary add some wheat flour. Cover with a damp cloth and leave for about 10 minutes. Then divide the dough into small pieces and roll them out as thin as possible between two pieces of baking paper. Heat some olive oil in a frying pan and sauté the tortillas briefly from both sides.$config[ads_text] not found
- 300g cabbage (alternatively: cabbage, spinach), stems removed and cut into small pieces
- 300g potatoes, cut into small cubes
- 1 tbsp olive oil
- 1 garlic clove, sliced
- 1 tbsp ground coriander
- 1 spoonful of dried chili peppers! salt
- 2 tablespoons creme fraiche
- 1 small red onion
- 2-3 tablespoons of freshly grated Parmesan or Pecorino
Bring salted water to a boil in a large pot and blanch the cabbage for about 2-3 minutes. Then "fish" out of the water and cold quench. Then cook the potato pieces in the water for about 10 minutes and then drain off the water.
In the meantime, heat some olive oil in a frying pan and sauté the garlic in it for a short time. Add the potatoes and the cabbage. Season with some ground coriander, the dried chillies, salt and pepper. Finally, add the crème fraîche and mix well. Simmer for about 2-3 minutes and then remove from heat. Cut a small red onion into fine cubes. Spread the potato and cabbage mixture over the tortillas and add the onions. Finally sprinkle some freshly grated Parmesan over it. Serve immediately.
