Pork Medallions | Feel Good Food | Tonic (May 2019).
A hearty recipe: pork medallions with broccoli and potato gratin. In our step by step guide we will explain in two minutes how to prepare it.

Ingredients (for 4 people):
- Salt pepper
- 1 tbsp flour
- 125ml of milk
- 50g herb butter
- 1 tbsp butter lard
- 1 tbsp butter
- 75g breadcrumbs
- 1 tsp coarse mustard
- 75g cheese
- 8 pork medallions
- 500g potatoes
- 400g broccoli

1 Season the pork medallions with salt and pepper and fry in buttered lard. Process the herb butter, the mustard and the breadcrumbs into a mass, which you then spread evenly over the pork medallions.
2 Wash the potatoes, peel them and cut into thin slices. Cut the cheese into small cubes. Blanch the broccoli in boiling water for about 3 to 4 minutes. Then scare it off in ice water and let it drain well.
3 Heat the butter in a saucepan. Then stir in flour and pour the roux with the milk. Let it boil while stirring.
4 Lay the vegetables evenly in a greased baking dish. Sprinkle with Bechamel sauce and sprinkle with the chopped cheese. Preheat the casserole in a preheated oven at 200 degrees (convection: 180 degrees) for 10 minutes.
5 Place the pork medallions on a baking tray and place in the oven. Gratinate golden brown with the casserole for another 10 minutes.
