  • 200 g of sugar
  • 1 pinch of salt
  • 200 ml rapeseed oil
  • 300 g flour, type 550
  • 100 g of ground almonds
  • 30 g of dark cocoa powder
  • ½ pck of baking soda
  • 1 tsp cardamom, ground
  • 100 g spice chocolate (Christmas chocolate)
  • 50 ml of milk
  • 50 ml brown rum

  • 150 g of flour
  • 100 g almond sticks
  • ½ teaspoon cinnamon
  • 75 g brown sugar
  • ¼ tsp salt
  • 100 g of liquid butter
  • some rapeseed oil for the mold

preparation

  1. Peel the pears, cut in half and remove the core. Boil the water with rum, sugar and spices in a saucepan, add the halves of the pear and cook covered, steam for 5 minutes, turning once in between. Remove fruits and allow to cool. For the batter, beat the eggs with sugar and salt until fluffy, then stir in the rapeseed oil.
  2. Mix the flour, almonds, cocoa, baking powder and cardamom in another bowl, finely chop and fold in the chocolate. Add the dry ingredients alternately with milk and rum under the egg-sugar mass. Lay the bottom of a springform pan (26 cm) with baking paper, brush the edge with rapeseed oil and fill with the chocolate sauce. Divide the halves of the pear with the curvature upwards next to each other.
  3. For the crumble, knead all ingredients in a bowl with your hands to a crumbly mass and spread on the cake. Bake in a preheated oven at 180 ° C top / bottom heat (circulating air 160 ° C) on the 2nd bar from the bottom for 60 to 70 minutes (make a stick sample!).
