Ingredients (for 4 people):
- 4 tablespoons olive oil
- Salt pepper
- 20g fresh yeast
- 2 packs of spring quark
- 480g of flour
- lemon juice
- 1 cup of creme fraiche
- 250ml of milk
- Bunch of rocket
- 30g red onions
- 540g apples
1 Fill the flour into a bowl for the dough. Crumble yeast and mix with sugar until the yeast is liquid (- this saves the dough). Warm the milk. Add the yeast, salt, warm milk and olive oil to the flour and knead with a hand mixer to a smooth dough. Cover and let rise in a warm place for 30 minutes.$config[ads_text] not found
Peel 2 onions and cut into fine rings. Stir spring quark and creme fraiche. Season with salt and pepper. Wash the apples, rub dry, core and cut into fine rings. Drizzle apple slices with lemon juice.
Divide the dough into two equal parts and roll out on a floured surface, so that two dough pancakes about 20 x 30 cm thick are formed. Place the dough patties on a baking sheet lined with baking paper and spread with one third of the spring quark mixture. Leave an approx. 1 cm wide edge. Cover evenly with apple and onion rings.
4 Bake in a preheated oven (electric oven 225 degrees, convection 220 degrees, gas level 5) for 10 to 12 minutes one after the other until golden brown. Meanwhile wash the rocket and spin dry. Remove the tarte flambée and sprinkle the remaining spring quark mixture onto the tarte flambée. Sprinkle rocket and serve warm or cold.
