Recipe Tempting vanilla slices

At Easter there are delicious snails, in the filling of which are chopped pistachios.

Preparation time: approx. 45 min.
Baking time: approx. 25 min.
Rest time: approx. 1 hr.

Ingredients (for 16 pieces)
• 400 g of flour
• 30 g of fresh yeast
• 80 g of sugar
• 1/8 l of lukewarm milk
• 2 eggs
• 80 g of liquid butter
• Salt
• 1/2 packet finesse fine
Lemon peel (Dr. Oetker)
• 1/2 teaspoon ground cardamom
For the filling
• 60 g of butter
• 75 g of chopped pistachios
• 50 g of honey
• 2 tbsp cream
• 20 g custard powder
• 3 tbsp sugar
• 1/4 l of milk
• 1 egg yolk
• 2 tablespoons powdered sugar

  1. Put the flour in a bowl, press in a hollow. In it, crumbled yeast, mix sugar and 6 tablespoons of milk. Covered for 15 minutes. Add eggs, remaining milk, butter and spices, knead for about 5 minutes. Covered for another 30 minutes.
  2. Melt butter for the filling. Stir in the pistachios, honey and cream and bring to the boil once. Let cool down. Cook custard powder, sugar and milk according to the instructions on the package, make a custard, allow to cool lukewarm, stir in egg yolks.
  3. Roll out yeast dough on floured work surface to a plate of approx. 40 x 60 cm. Pass pistachio filling on top. Roll up from the long side and cut into 2 cm thick slices. Squeeze seams well. Place the snails on two baking sheets covered with baking paper and let them rest for another 10 minutes.
  4. Using a spoon, press a depression in the center of each screw. Fill with pudding. Bake in preheated oven at 180 degrees (hot air: 160 degrees) on the second bar from below for 20-25 minutes. Dust with powdered sugar.

Tip: Try something new. Lavender sugar gives the vanilla snails a very special aroma!
