A simple red-barb recipe for a guaranteed successful dinner - alone or with friends.
Grilled red mullet fillets served on cherry tomatoes
ingredients for 4 persons
(Preparation time approx. 1 hour)
- 8 red mullet fillets
- 8 shish kebab skewers
- 2 crushed garlic cloves
- 100 ml of olive oil
- 3 tablespoons lime juice
- 300 g cherry tomatoes
- 1 pinch of salt, crushed pepper

Put 1 red mullet fillet on wooden skewers. Place in a flat, acid-proof container. Season with salt and pepper. Stir crushed garlic, oil and lime juice. Pour over the fish and marinate for about 30 minutes.
Add 2 cherry tomatoes for 1-2 minutes in boiling water. Drain, cold quench and skin. Season with salt and pepper.
Drain 3 fish skewers. Cook in the oven under the grill for 3-4 minutes from each side. Drizzle hot with drained marinade and let cool. Arrange fish skewers and cherry tomatoes together.
By the way: The skewers can also be cooked on an open barbecue fire at a picnic. As a side dish recommend thick orange slices.
