- 3 eggs (size M)
- 75 g of sugar

Cut off 4 scoops of ice cream with the ice cream scoop and place them on a flat plate with foil. Freeze the ice balls for at least 1 hour.
In the meantime, separate the eggs and beat the egg whites stiffly with the whisk of the hand mixer. Let it trickle in sugar and salt. Stir in the yolks. Mix flour and baking soda and sift the mixture over the custard. Gently lower the flour mixture. Lay out a baking tray (32 x 39 cm) with baking paper and spread the mass evenly on 3/4 of the surface. Bake the biscuit in a preheated oven (stove: 200 ° C / circulating air: 175 ° C / gas: see manufacturer) about 12 minutes.
Pour the biscuit on a dishcloth spread with sugar and let it cool for about 40 minutes. Wash the lemon balm and shake it dry. Remove the baking paper from the biscuit. Cut the biscuit into 4 equal square pieces. Place an ice ball on each square and wrap the biscuit tightly around the ice under pressure.
Grill the ice cream balls for about 1 minute while turning on the hot grill. Arrange the grilled ice cream on plates together with the Creme au Chocolat and cranberries. Decorate everything with lemon balm.
