The sweet and sour fruits harmonize perfectly with the heavenly cream of cottage cheese and vanilla pudding. Every bite here becomes a fruity and fresh summer treat!

Snow cake with gooseberries

Ingredients for about 20 pieces

For the dough:

  • 400 g of flour
  • 1/2 cube of yeast
  • 50 g of sugar
  • 200 ml of lukewarm milk
  • 1 egg
  • 1 pinch of salt
  • 70 g butter (liquid)

For the cream:

  • 500 g of low-fat quark
  • 250 g of quark (20%)
  • 140 g of sugar
  • 3 egg yolks
  • 1 pck. Custard powder
  • 250 ml of milk
  • 1 pck of vanilla sugar
  • 50 g go almonds
  • 50 g of sultanas
  • 3 tbsp rum


  • 1 kg gooseberries (from the glass, drained, measure 125 ml of juice)
  • 5 egg whites
  • 125 g of sugar
  • 1-2 tablespoons powdered sugar


  1. Put the flour in a bowl, press a bowl in the middle. Crumble in yeast, stir with 1 pinch of sugar, 3 tablespoons of the lukewarm milk and some flour from the edge, let it rest for about 15 minutes. Add salt, butter and the rest of the sugar and milk. Covered for about 1 hour let go.
  2. Stir cream ingredients until smooth. Roll out the dough on a baking tray covered with baking paper and form a small margin. Give curd cheese and gooseberries. Bake in a hot oven (180 degrees, second from below) for 20-25 minutes.
  3. Beat egg whites stiff in the food processor. Scoop in sugar first, then add juice. Take out, add mass and continue baking for approx. 15 minutes. Cool, dust with icing sugar.
