Ingredients for 12 pieces

For the dough

  • 250 g flour
  • 100 ml of water
  • 50 g of butter
  • 1 egg
  • salt

For the filling

  • 200 g chicken breast fillet
  • 150 g sour cream
  • 1 pepper
  • 1 handful of spring onions
  • 1 clove of garlic
  • 1 teaspoon cumin
  • 1 teaspoon paprika powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 tsp coriander seeds
  • Broth, pepper, salt

First, separate the egg and set the egg white aside. Process flour, water, butter, egg yolk and a little salt into a smooth dough. Cover the dough and let it rest for about an hour, making it smoother and easier to process. In the meantime, the filling can be prepared. Cook the chicken in broth and then finely chop or grate with a fork. Mix with the sour cream, the diced peppers, the cut spring onions, garlic and the spices.

Now roll out the dough thinly on a floured surface and cut out circles of 10 to 12 cm in diameter. Add one tablespoonful of stuffing, fold in the middle and press together at the edges. Either press the edges with a fork or fold again so that nothing leaks when baking. Brush the empanadas with the egg whites and bake for 30 minutes at 200 ° C in a preheated oven.
