FOR 4 PIECES:
For the dough
- 225 g soft butter
- 225 g of sugar
- 3 eggs
- thinly grated peel of 2 organic lemons
- 1/2 tsp salt
- 300 g of lean quark
- 750 g of flour
- 1 1/2 sachets of baking soda
- 300 g of sultanas
- 150 g chopped almonds (freshly roasted)
- 75 g each of citronate and orange peel

- about 150 g of liquid butter
- about 250 g of sugar
- 50 g of powdered sugar
1 Preheat oven to 180 degrees. Beat butter and sugar until frothy. Smash eggs, lemon zest and salt. Stir in cottage cheese. Sieve flour with baking powder, knead. Knead remaining ingredients. Quarter the dough, each roll out to an approx. 25 cm long oval. From the long side to two-thirds turn up, reshape. Place 2 studs each on a tray covered with baking paper and bake one after the other from the bottom for approx. 30 minutes.
Brush two lumps two or three times with butter and sprinkle with sugar. Press on the sugar layer, allow the stollen to cool. Each dusty with powdered sugar.
