Recipe Lime tartlet with meringue cap

Lemon Tartlets with Meringue Caps Recipe (June 2019).


Summer fresh for the palate guarantee the fruity-fresh Tartelettes

Difficulty: medium
Preparation time: approx. 1 hr.
Freezing time: about 1 hour
Baking time: approx. 12 minutes, then approx. 5 minutes to overgrill
Cooling time: approx. 41/2 hours in total

Ingredients (for 6 pieces)
For the dough
• 100 g soft butter
• 50 g of the finest sugar
• 1 packet of bourbon vanilla sugar
• grated peel of 1/2 lime
• 150 g of flour
For the cream
• 400 g of cream
• about 2 tablespoons cornstarch (20 g)
• 100 g of the finest sugar
• 5 egg yolks
• 200 ml of lime juice
• grated peel of 2 limes
• 2 egg whites
• 100 g of the finest sugar

1. Knead butter, sugar, vanilla sugar, lime zest and flour. Form to the ball. Covered for about 1/2 hour cold. Roll out dough between two cut freezer bags to the rectangle (about 35 x 30 cm). Pull off the upper foil. Assemble 6 tartlet trays with lifting bottom (10 cm Ø, Städter) to the rectangle.
2. Pour the dough onto the molds, remove the foil, press the dough into the molds. Form small rolls from the remaining dough, put them on the edge and press them up. Pierce floors. Freeze for 1 hour.
3. Preheat oven to 200 degrees (hot air: 180 degrees). Bake dough with deep-frozen dough on a medium rack for approx. 12 minutes. Allow to cool, remove Tarteletts.
4. Remove 6 tablespoons of cream, stir in the cornflour. Heat remaining cream and sugar. Add stirred starch while stirring, bring to a boil. Stir in the egg yolks one after the other. Pour juice, continue to simmer for 1 minute while stirring. Pull from the cooking area, stir in the bowl, allow to cool slightly. Pour into the Tarteletts, chill for about 4 hours.
5. Preheat oven grill. Beat the egg whites until stiff. Add sugar, beat for about 2 minutes. Put the tartlets on a baking sheet, add the meringue cloud like a cloud. Grill on the bottom rail for approx. 5 minutes.
