Goes well with cooked meat and fish.
- 1 tablespoon of Dijon or grainy mustard
- 5 tbsp balsamic vinegar
- 1 tbsp mineral water
- 1 teaspoon vegetable oil
- 1 toe garlic

Put mustard, vinegar, mineral water and oil in a screw cap, close and shake well. Add 1 crushed garlic clove to taste. Finely chop 7-8 basil leaves, add. Keep cold.
Ravigote sauce with yoghurt
Goes well with eggs, fish and cooked beef.
- 1 egg
- 3 gherkins
- 1 onion
- 1 bunch of mixed herbs
- 300g lean yoghurt
- 1/2 tsp mustard
Cook the egg, peel and crush. Mix with 3 medium sized chopped gherkins, 1 small chopped onion and 1 large bunch of chopped herbs. Beat 300 g skimmed milk yoghurt with 1/2 tsp. Mustard and salt until creamy. Mix with the herb mixture.
Goes well with steamed fish and white meat.
- 125 g low-fat cream cheese (0.1% fat) or skimmed quark
- 1 teaspoon freshly grated horseradish
Beat the cream cheese or curd cheese with the freshly grated horseradish, a little salt and pepper.
Mayonnaise without oil
Goes well with surimi, scampi and shrimp.
- 1 egg
- 1 tsp mustard
- 50 g of low-fat cream cheese (0.1% fat) or skimmed quark
Stir fry, finely crush with the fork and mix with (alternatively, whisk 1 egg yolk and 1 tablespoon of mustard). Stir in the low-fat cream cheese (0.1% fat) or skimmed quark, add finely chopped herbs as desired. Season with salt and pepper.
Goes well with steaks and grilled fish.
- 1 medium onion
- 6-8 tomatoes or 300 ml canned tomatoes
- Fresh herbs
Sauté the medium chopped onion in a coated pot, add 6-8 skinned, chopped tomatoes (or 300 ml canned tomatoes). Season with salt, pepper and simmer the sauce for 20 minutes. Puree and refine with fresh herbs.
