Apple Upside Down Cake (May 2019).

Ingredients for the dough
- 250 g of soft butter
- 250 g of sugar
- 1 packet of Bourbon vanilla sugar
- 6 eggs
- 1 pinch of salt
- grated peel of 1/2 organic lemon
- 2 tablespoons of Cointreau
- 200 g of wheat flour
- 100 g cornmeal
- 2 teaspoons of baking soda

- 8 small or 4 medium sized apples (eg Gala)
- Juice of 1 lemon
Ingredients for the crispy
- 70 g of butter
- 2 tbsp sugar
- 2 tablespoons honey
- 100 g almond flakes
Beat 1 butter, sugar and vanilla sugar until creamy. One by one, then stir in salt, lemon zest and Cointreau. Mix flour and baking powder, stir briefly. Place in a springform pan covered with baking paper or on a spring plate (28 cm Ø), smooth out.
Peel and halve 2 apples and remove the core. Cut in halves crosswise. Drizzle with lemon juice. Distribute halves on the dough, do not press in. Bake cakes in a hot oven (175 degrees, second bar from the bottom) for approx. 35 minutes.
3 Bring butter to froth shortly before the end of the baking time. Add sugar and honey, bring to the boil. Remove from the heat and stir in the almonds.
Take 4 cakes out of the oven, spread the mixture on top of them, leaving apples to spare. Bake cake for 10-15 minutes. Serve with whipped, slightly sweetened cream.
Tip:Half of the dough is sufficient for a 23-25 cm pike or tart shape with a high wavy edge.
