As an appetizer or simply as a light summer dish: The spicy asparagus crepes will certainly be met with enthusiasm by you and your guests.
Crêpes with green asparagus and ham
Ingredients for the dough
- 150 g of flour
- 300 ml of milk
- 2 eggs
- 1 tsp salt

- 1/2 bunch chives
- 1/2 bunch of parsley
Ingredients for the filling
- 1 kg asparagus
- 200 g of cooked ham
- grated Parmesan
- Whisk all ingredients for the dough together to form a liquid mass. Chop the herbs and lower them.
- Peel the asparagus and cut off woody ends. Halve the asparagus lengthwise and add it to boiling water with a little salt and sugar. Let the asparagus cook for about 10 minutes.
- In the meantime, cook the crêpes dough in a frying pan with very little oil to make several pancakes until the dough is used up. Drain the asparagus water.
- Cover the finished crepes with a slice of ham, several halves of asparagus, sprinkle with some Parmesan and beat in the crepes.
