Recipe asparagus crêpes with ham

As an appetizer or simply as a light summer dish: The spicy asparagus crepes will certainly be met with enthusiasm by you and your guests.

Crêpes with green asparagus and ham

Ingredients for the dough

  • 150 g of flour
  • 300 ml of milk
  • 2 eggs
  • 1 tsp salt

  • pepper
  • 1/2 bunch chives
  • 1/2 bunch of parsley

Ingredients for the filling

  • 1 kg asparagus
  • 200 g of cooked ham
  • grated Parmesan
  • salt
  • sugar


  1. Whisk all ingredients for the dough together to form a liquid mass. Chop the herbs and lower them.
  2. Peel the asparagus and cut off woody ends. Halve the asparagus lengthwise and add it to boiling water with a little salt and sugar. Let the asparagus cook for about 10 minutes.
  3. In the meantime, cook the crêpes dough in a frying pan with very little oil to make several pancakes until the dough is used up. Drain the asparagus water.
  4. Cover the finished crepes with a slice of ham, several halves of asparagus, sprinkle with some Parmesan and beat in the crepes.
