For 2 portions:
2 pcs. Chicken breast à 150 g
2 slices of raw ham
2 red peppers
1 pinch of dried basil
2 handful of Ruccola
½ soup cubes
salt and pepper
2 tsp mustard
1 tablespoon of oil for frying
3 tablespoons water for vegetable soup stock
maybe 1 piece of aluminum foil
1 Preheat the oven to 120 ° C (circulating air). Cut into the raw chicken breasts (cut the meat in the middle a little) and then season with salt and pepper. Add mustard and basil in the chicken breast pieces. Now wrap the chicken with the Parma ham.
2 Wash the peppers, remove seeds and cut into strips. Bring water to a boil and dissolve half of the soup cube into a vegetable stock.
3 Heat a pan with oil, fry the chicken for 5 minutes from each side, then remove from the pan and keep warm in a preheated oven, wrapped in foil or wrapped in aluminum foil. Braise the sliced pepper strips for 5 minutes in the chicken sauce.
4 Pour the vegetable stock into the pepper strips and cook for about 2 minutes. Finally, serve the finished food on plates and garnish with a little rocket.
