Clean eating cauliflower curry with eggplant and mango

Cauliflower Curry

Ingredients for 2-3 servings

  • 1 cauliflower

    "Clean Eating" by Sarah Schocke and Eva Dotterweich (published by Christian Verlag) offers a great variety of recipes based on the motto: real food, natural exercise and a new way of life.

  • 1 eggplant
  • 1/2 mango

  • 1 lime
  • 1/2 bunch cilantro

  • 1 teaspoon cumin seed

  • 1 tsp black peppercorns
  • 1 tsp black mustard seeds

  • 5 cardamom pods
  • 400 ml of coconut milk

  • 1 tsp turmeric

  • 1 Msp. Chili powder

  • 1 tsp salt


  1. Clean cauliflower, wash and divide into small florets. Wash eggplant and dice. Peel mango, cut from the stone and dice. Squeeze out lime. Wash cilantro, shake dry and finely chop.
  2. Put the cumin, pepper and mustard seeds in a pan without fat and roast for about 30 seconds. Then finely chop in a mortar. Toast cardamom in a mortar.

    Delicious snack in between: homemade granola bars.

  3. Heat a pan, add the solid fat of the coconut milk and fry the cauliflower in it for 5 minutes. Add lime juice, aubergine, remaining coconut milk and spices. Season with turmeric, chili powder and salt and cover, simmer at medium temperature for 20 minutes. Add the mango 2 minutes before the end of the cooking time. Serve sprinkled with coriander.

Tip: Instead of aubergine, carrots and spring onions taste great in it. As a sattler, you can also cook 2 diced potatoes.
