And not only for that: In the oldest part of Cape Town, the Bo Kaap district, you will find the Cape cuisine, created by the slaves from India, Indonesia and Malaysia settled by the Dutch colonies. Six families offer to cook with them. Kerstin Görn met Faldela Tolker, conjured with her after a stroll through food stores in their "purple house" spicy curry, samosas (stuffed dumplings) and Roti (flatbread).

Bobotie with yellow rice

Ingredients (for 6 servings)

For the Bobotie:

3 slices of toasted bread
1 onion (chopped)
2 tbsp sunflower oil
1 kg of ground beef
1 tsp turmeric
1 teaspoon chilli powder
1 teaspoon curry powder
1 tsp gem. coriander
1 bar of TL salt
150-180 ml of white wine vinegar
3 tbsp sugar
about 2 tablespoons light raisins (sultanas)
2 eggs (L)
180-200 ml of milk
about 4 small dried bay leaves (to taste).

For the yellow rice:

2 cups basmati rice
3-4 cups of water
1 tsp turmeric
1 bar of TL salt
4 cardamom pods
1-2 cinnamon sticks
2-3 tbsp sugar
2-3 tablespoons butter


1. Soak the bread in 250 ml of water. Stir onion in hot oil in a wide pan while stirring gently for about 10 minutes. Put the ground beef on a sieve, rinse with cold water, drain.

2. Add the hack to the onions, add the mixture while stirring. Add turmeric, chili, curry, cilantro and salt, covered, simmer gently for 5-10 minutes, stirring occasionally. Stir the vinegar and sugar until smooth, add. Squeeze out toast bread slices, pick apart and add with the raisins. Mix everything well.

3. Spread the mixture in a baking dish (about 32 x 23 cm). Squeeze the surface slightly with a tablespoon while smoothing. Bake in a hot oven (175 degrees, second bar from the bottom) for about 30 minutes until the surface is browned.

4. Beat eggs and milk, remove from oven, pour egg-milk mixture on top. Spread bay leaves on it. Bake in a hot oven for about 10 minutes until the surface is golden brown.

5. Put rice with water and spices in a saucepan, stir well. Bring to a boil, then simmer over low heat until soft and evaporated.

6. Immediately place the rice in a bowl, remove the cardamom pods and cinnamon stick. Immediately add butter and sugar, if necessary heat briefly in the microwave again, so that both melts well. Sprinkle some roasted almonds as desired.
