Caribbean creme brulee

ingredients for 4 persons

  • 5 egg yolks
  • 120 g of sugar
  • 250 ml full-fat coconut milk
  • 2 eggs
  • Mark a vanilla pod


The first step is to scrape the pith out of the vanilla pod by cutting it lengthwise and using the tip of the knife to scrape out the brown pith. Separate the five egg yolks from the egg white and stir the yolks with the eggs, the sugar and the marrow until a smooth mass has formed. Now add the coconut milk while stirring.

Put the resulting cream in four molds, put them in a large bowl (water bath) and cook at 150 ° C convection in the preheated oven. Remove from the oven after 45 minutes and lightly sprinkle with sugar before eating. This flambé and the Caribbean crème brûlée is ready.
