For the dough

  • 300 g wheat flour (Type 405) or spelled flour (Type 630)
  • 100 g of sugar
  • 1/2 tsp salt
  • 1/2 tsp bourbon vanilla powder
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 150 g of frozen or cold margarine

For the pudding filling

  • 3 tbsp sugar
  • 2 tablespoons cornstarch
  • 1/2 tsp bourbon vanilla powder
  • 250 ml soy milk

For the apple filling

  • 1 kg of apples (sour varieties like Boskop, Elstar, Jonagold)
  • 1/2 lemon
  • 2 tbsp sugar
  • 1 teaspoon cinnamon powder
  • 2 tablespoons cornstarch

Wheat or spelled flour for processing
Margarine for the mold


For 1 Springform (Ø 26 cm, 12 pieces)
Preparation time: approx. 30 min.
Cooling time: approx. 30 min.
Baking time: approx. 40 min.

1. For the dough, mix all the dry ingredients in a bowl. Grate the frozen margarine over the flour (or pour cold margarine into little flakes) on a raw food grater and mix everything with the kneading hooks of the hand mixer or with your hands until they are crumbly. Gradually add 4-5 tablespoons of ice-cold water until the crumbs clump together. Knead everything quickly with your hands. Roll out the dough between two layers of cling film or on a small amount of flour approx. 1 cm thick (Ø approx. 30 cm). Grease the springform.
Put the dough in the mold, pull up a 5 cm high edge and place the dough in the mold for about 30 minutes in the refrigerator.
2. For the pudding filling, mix the sugar, starch and vanilla with one third of the soymilk. Bring the remaining soy milk to a boil, add the starch mixture and let it simmer for about 1 min. On a low heat while stirring. Remove the pudding from the heat and let cool, stirring occasionally, so that no skin forms on the surface.
3. Preheat the oven to 180 °. For the apple filling, wash the apples, quarter them and remove the core. Cut the apple quarters into thin slices. Squeeze out the lemon. Mix lemon juice, sugar, cinnamon and starch with the apple slices.
4. Pierce the pastry with a fork several times and spread the pudding on it. Add the apples and bake the cake in the oven (middle) for 35-40 minutes until the filling is golden brown. Should it get dark too fast, just cover with aluminum foil.
5. Allow the cake to cool completely before releasing it from the mold.
